Avocado Toast with Hawaiian Pepper Jam


6 slices french bread
Softened organic butter
2 ripe organic avocados
12 sprigs arugula
6 organic cherry tomatoes – cut in half lengthwise
2 fresh organic lemons
Fresh ground pepper
Sea salt
Steve’s Akaka Falls Passion Fruit Hawaiian Pepper Jam
Organic sheep’s milk feta cheese

This is one of my favorite brunch treats. I especially love it with a sprinkling of feta cheese on top!


  1. Slice the french bread 1/2 inch thick and butter both sides.
  2. Pan-fry all the bread slices in a medium-temperature skillet.
  3. Slice the whole avocado in half and spoon out the flesh into a large bowl. Squeeze lemon juice over the avocado as soon as you scoop it into the bowl. This will keep the avocado from turning brown and add wonderful fresh flavor.
  4. After all the avocados are in the bowl, sprinkle with 3 pinches of sea salt. Mash up the avocados with a potato masher very lightly. Leave the avocado mixture creamy, but still lumpy.
  5. Spread a couple of tablespoons of the avocado mixture on each piece of toast. Top with arugula and sliced cherry tomatoes and sprinkle with ground pepper. Finish each with a drizzling of Steve’s Akaka Falls Passionfruit Hawaiian Pepper Jam for a little extra pizzazz and delicious spice.
