Blueberry Dark Chocolate Cake Roll Recipe

Ingredients:

2 eggs
1 can sweetened condensed milk
1 cup all-purpose flour
1 tablespoon baking soda
FILLING:
1 jar (11 oz.) Steve’s Akaka Falls Farm Blueberry Dark Chocolate Preserve
1 (8 oz.) container Cool Whip (refrigerated)
Semi-sweet chocolate chips

Preparation:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease and line with parchment an 11-inch x 16-inch baking pan.
  3. Sift the flour and baking soda; set aside.
  4. Whip the eggs until light yet stiff.
  5. Add the sweetened condensed milk and mix to combine.
  6. Mix in the flour mixture just until combined. Do not overmix.
  7. Pour batter evenly into the prepared pan, and spread with a large offset spatula.
  8. Bake in the preheated oven for 7-10 minutes.
  9. Let cool to room temperature in a pan; unmold. Trim edges.
  10. Spread the Akaka Falls Farm Blueberry Dark Chocolate Preserve and Cool Whip mixture evenly on top.
  11. Roll up the cake and transfer it to a serving platter. Freeze.
  12. Melt the chocolate chips in the microwave, and decorate the top of the cake roll. Trim ends for a clean presentation.
    FOR FILLING:
    Combine the preserves with the Cool Whip; freeze until ready to use.
