Calamondin Ginger Bacon Quiche




  1. Preheat the oven to 350°F.
  2. Sauté the bacon and shallots on medium heat until the bacon is slightly crunchy.
  3. Drain off the extra bacon fat and add the Calamondin Ginger Jam. Stir for 2 minutes. Remove from the heat.
  4. Whisk together the eggs, milk, cream, sea salt, pepper, and nutmeg.
  5. Layer the bacon mixture, raw onion, cheese, bacon mixture, raw onion, and cheese in the pie crust.
  6. Reserve a couple of spoonfuls of bacon for later.
  7. Gently pour the egg mixture to right below the top rim of the crust.
  8. Bake at 350°F for 50-60 minutes or until a knife comes out clean. Do not overbake!
  9. Let the quiche cool for 10 minutes. Serve topped with bacon crumbles and chopped parsley.
