Coconut Dark Chocolate Chewy Cookie
Egg white 85g
Vanilla extract 2.35g
Icing sugar 265g
Cocoa powder 53g
Salt 1.5g
Walnuts 12g
Akaka Falls Farm Coconut Dark Chocolate Butter 14g
Step 1
Heat the oven to 325F (163C). Line two large-rimmed baking sheets with parchment paper.
In a large bowl whisk the sugar, cocoa powder and salt together until fully combined.

Step 2

In the bowl of an electric mixer fitted with the paddle attachment add egg whites and vanilla extract and Akaka Falls Farm Coconut Dark Chocolate Butter. Pour the sugar and cocoa powder mixture on top and mix it on the lowest speed for exactly one minute then stop. Add all of the walnuts at once. Mix again on the lowest speed for exactly 20 seconds. Stop the mixer and remove the paddle.
Step 3
Using a rubber spatula, dig to the bottom and mix from the bottom to the top to make sure everything is evenly incorporated. Using an ice cream scoop, spoon out six mounds (100g each) on each tray, spacing them out evenly, and bake for 15 minutes until the tops are glossy and lightly cracked
Step 4
Allow them to cool completely and store in an airtight container for up to 3 days
