Hawaiian Baklava with Island Honey

INGREDIENTS:

  • 16 oz. package of organic phyllo dough, defrosted
  • 5 oz. organic macadamia nuts, chopped fine
  • 5 oz. organic pistachios, chopped fine
  • 5 oz. organic coconut, chopped fine
  • 1 cup organic butter, melted
  • 1 Tbsp ground cinnamon
  • 3/4 cup organic sugar
  • 3/4 cup water
  • 3/4 cup honey
  • 1 Tbsp vanilla extract
  • 1 Tbsp food grade rose water (from health food stores)

DIRECTIONS:

  1. Preheat the oven to 350°F. Butter a baking dish.
  2. Toss together the cinnamon and nuts. Unroll the phyllo and cover it with a damp cloth while assembling the baklava, to keep it from drying out.
  3. Place 4 sheets of phyllo in the bottom of the prepared dish. Brush generously with melted butter between each sheet of phyllo dough.
  4. Sprinkle 3 tablespoons of the nut mixture, then layer 4 sheets of phyllo. Brush generously with melted butter between each sheet of phyllo dough.
  5. Repeat the layers until all the ingredients are used, ending with about 9 sheets of phyllo on top. Continue to brush each layer of phyllo dough with butter.
  6. Using a sharp knife, cut the baklava diagonally to make 36 diamond shapes before baking.
  7. Bake in the preheated oven for 50 minutes, until golden and crisp.
  8. While the baklava is baking, combine the sugar and water in a small saucepan over medium heat and bring to a boil. Stir in the honey, vanilla, and rose water. Reduce the heat and simmer for 20 minutes.
  9. Remove the baklava from the oven and immediately spoon the syrup over it. Let it cool completely before serving.
