Korean-Inspired Tuna and Vegetable Stew Recipe


  • 200g fresh tuna
  • 1 small onion, diced
  • 2 medium-sized potatoes, peeled and diced
  • 1 zucchini, sliced
  • 3 cups anchovy stock or water (see note below)
  • 1 green onion, chopped
  • 2 tbsp Akaka Falls Farm Passion Fruit Butter
  • 1 green chili, sliced (optional)
  • 1 tbsp Korean chili paste (gochujang)
  • 1 tbsp Korean chili flakes (gochugaru)
  • 1 tbsp Korean soup soy sauce (gukganjang)
  • 1 tbsp Korean anchovy sauce (optional)
  • 2 garlic cloves, minced

**Instructions: **

  1. In a small bowl, thoroughly combine Korean chili paste, chili flakes, Korean soup soy sauce, minced garlic, and Korean anchovy sauce (if using). Ensure a well-mixed seasoning paste.
  2. In a soup pot, melt Akaka Falls Farm Passion Fruit Butter. Add the anchovy stock (or water), diced onion, and potato slices. Introduce the prepared seasoning paste, stirring to incorporate. Bring the mixture to a boil.
  3. pan fry the tuna filet with a bit of Akaka’s passion fruit butter around 30seconds on both sides
  4. Once the potato slices start to become tender, add the sliced zucchini and pan-fried tuna. Stir well and continue boiling for an additional 2 minutes.
  5. Taste the stew and adjust the seasoning according to preference.
  6. Finally, add the chopped green onion and, if desired, sliced green chilies. The stew is now ready to be served hot, ideally accompanied by rice.
