Lychee Grape Tatin with Orange Ginger Mizunara Oak Cask Whiskey Preserve Recipe

For the Tart Base:

-1.5 cups of all-purpose flour

-10 tbsp of caster sugar

-1⁄2 cup + 3 tbsp of butter

-4 egg yolks, beaten

-A pinch of salt

For the Filling:

-2 cups of cream cheese

-8 lychees deseeded

-10 red grapes deseeded

-1⁄2 cup of Akaka Falls Farm Orange Ginger Mizunara Oak Cask Whiskey Preserve

-2 tablespoons of caster sugar

-2 egg yolks

-1 cup of fresh cream

-1 teaspoon of cardamom powder

-1/4 teaspoon of vanilla essence


  1. Initiate the tart preparation by gradually combining flour, caster sugar, butter, beaten egg yolks, and a pinch of salt. Mix each ingredient thoroughly. Utilize this mixture to line a tart dish.
  2. Preheat the oven to 180°C (356°F) and bake the prepared tart base for approximately 7 minutes or until it acquires a light golden brown color. Remove from the oven and allow it to cool.
  3. Create a smooth paste by blending cream cheese and lychees together.
  4. To the cream cheese and lychee mixture, add caster sugar and egg yolks, and whip until smooth. Incorporate fresh cream, Akaka Falls Farm Orange Ginger Mizunara Oak Cask Whiskey Preserve, cardamom powder, and vanilla essence, stirring until well combined.
  5. Pour this delectable filling into the prepared tart base.
  6. Bake the tart in a preheated oven at 150°C (302°F) for approximately 40 minutes.
  7. Once baked, take the tart out of the oven, let it cool.
  8. Refrigerate the tart for a few hours or until well-chilled. Serve this cold for a delightful and refreshing treat.
