Macadamia Nut Encrusted Chicken Breast Recipe

Ingredients:

3 organic chicken breast

1 cup mayonnaise

1/2 cup yellow mustard

5 oz. White or yellow corn chips

1 cup macadamia nuts

1 tbls. black sesame seeds

green onions thinly slice

Instructions:

Wash & pat dry chicken

Place chicken breast between two pieces of parchment paper and gently tenderize with a  mallet until chicken is approximately 1/2 inch thick.

Mix mayonnaise & yellow mustard together in a bowl, set aside.

In a food processor, pulverize corn chips into small pieces, add macadamia nuts,  pulverize a few more seconds, add sesame seeds

Pour Breading mixture onto a plate, set aside.

For Sauce- Stir in 1/2 cup yellow mustard, add 3-4 tablespoons of Steve’s Akaka Falls  Passion fruit Preserves, mix well and set aside.

Dredge chicken in mayonnaise mustard mixture, coat each side well in corn chip  breading.

Bake at 350 degrees until golden approximately 30 minutes. Remove from oven, cut  each piece in half, plate Drizzle Lilikoi mustard sauce on top of each serving &  garnish with green onions .

Since 1986 Marie has made Hawaii her home. Marie became passionate about developing Gluten Free and Allergen friendly foods. She has spent the past 29 years studying different dietary lifestyles, Atkins, Paleo, Keto, The Whole Thirty, Diabetic etc.. Marie has focused her culinary talents on recipe development and testing, catering to a unique clientele whom have certain dietary restrictions.
