Macadamia Nut Shortbread Cookies



  1. In a mixing bowl, combine the organic butter, Macadamia Nut Butter, organic vanilla, and organic sugar. Mix with the paddle attachment on low until just combined.
  2. Sift the organic flour and then measure out 3 1/2 cups. Stir together the organic flour and sea salt.
  3. Add the flour mixture to the butter mixture 1/2 cup at a time. Mix on low until combined between each flour addition.
  4. Turn the dough onto a floured board and shape it into a flat disk. Add the dough to the bowl and cover the bowl with a clean kitchen towel. Chill for 30 minutes.
  5. Preheat the oven to 350°F.
  6. Flour the board and roll the dough to 1/2 inch thick. Cut into the desired shape.
  7. Place on an ungreased baking sheet and bake for 23 minutes, until the edges begin to brown.
  8. Allow the cookies to cool and then add organic chocolate chips to the double boiler to melt. Stir slowly until smooth.
  9. Dip one side of the cookies in chocolate and place on a natural parchment-paper-lined sheet pan.
  10. Sprinkle with a little coarse sea salt before the chocolate hardens.
  11. Finish hardening the chocolate in the refrigerator. Once hardened, place it in a glass Pyrex container and store it in the refrigerator.
  12. The cookies are best served cold.
