“Mai Tai”

The Mai Tai is one of the most famous tiki drinks in the world. The name means “the best-out of this world” in Tahitian. A classic Mai Tai is composed of just rum, fresh lime, orgeat, and orange curaçao. This drink was created to showcase the qualities of good rum. However bartenders throughout time have somewhat butchered this recipe into what is most commonly now a sweet mix of fruit juices and syrups. We are going to make the classic Mai Tai, but leave out the orange curaçao, as it is full of sugar and artificial coloring dye. Instead we will replace the orange curaçao with 1 tablespoon of Steve’s passion pineapple jam giving it the same citrus flavor (with a little extra tropical twist), with less sugar and no dye.

For this recipe you will need:

2 ounces white rum (we used Ko a Hawaiian rum)
1 tablespoon of Steve’s Passion Pineapple Preserve
3/4 ounce lime juice freshly squeezed
1/2 ounce of orgeat
1/2 ounce dark rum (we used Old Lahaina rum) 1/2 cup of ice
Lime and mint for garnish
Step 1. Add the white rum, Steve’s jam, orgeat, and lime to a
shaker with ice and gently shake until blended.
Step 2. Pour the whole shaker into a double rocks glass
Step 3. Float the dark rum over the top
Step 4. Garnish with a lime wheel and a mint sprig.
Step 5. Enjoy!
