Mediterranean Seafood Pasta with Saffron and Lemon Ginger Preserve-Infused Cream Sauce

  • 8 ounces of pasta (linguine, fettuccine, or spaghetti)
  • 8 large shrimp, peeled and deveined
  • 8 small scallops
  • 8 mussels, cleaned and debearded
  • 1/2 cup of dry white wine
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1/2 teaspoon of saffron threads, steeped in 1/4 cup of warm water
  • 1/2 cup of heavy cream
  • Salt and black pepper, to taste
  • Freshly chopped parsley for garnish
  • Lemon zest for garnish
    Peach-Infused Cream Sauce:
  • 1 ripe peach, peeled, pitted, and diced
  • 1/4 cup of chicken broth
  • 1 tablespoon of Akaka Falls Farm Lemon Ginger Preserve
  • 1/4 cup of heavy cream
  • 2 tablespoons of butter
  • Salt and black pepper, to taste


1) Peach-Infused Cream Sauce:

  • In a saucepan, combine the diced peach and chicken broth.
  • Simmer the peach until it becomes tender and the liquid reduces, which should take about 5-7 minutes.
  • Blend the peach and chicken broth until you achieve a smooth sauce.
  • Return the sauce to the saucepan, add the heavy cream, Akaka Falls Farm Lemon Ginger Preserve and butter, and continue simmering until the sauce thickens.
  • Season with salt and black pepper to taste. Keep the sauce warm.

2Mediterranean Seafood Pasta:

  • Cook the pasta according to the package instructions until it reaches an al dente consistency. Drain and set it aside.
  • In a large skillet, heat the olive oil over medium-high heat.
