Passion Fruit Bhut Jolokia Preserve on a Smoked Salmon Poached Egg Toast

1 slice Dave’s Killer Bread 21 Whole Grain Thin Sliced 1⁄2 medium avocado mashed
Zest and juice of half a lime
4oz smoked salmon
1oz red onion sliced thinly
Pinch of chili pepper
A spread of Akaka Falls Farm Passion Fruit Bhut Jolokia Preserve 2 eggs
Wild rucola (arugula)
Start by heating the toast in an oven for 2 min at 400 degrees (or use toaster). In a bowl, mash the avocado with a fork. Mix in the onion, lime juice and zest, and chili flakes. Prepare the poached eggs by adding 2 freshly cracked eggs to boiling water until the white is totally cooked. Spread the preserve on top of the toast then top it with avocado mix, add the salmon slice topped with 2 poached eggs and sprinkle couple leaves of wild rucola.
