Passion Fruit Cheesecake

DIRECTIONS:

  1. Preheat the oven to 375°F.
  2. Combine the organic cream cheese, organic sugar, organic lemon juice, organic vanilla, and organic egg.
  3. Beat all the ingredients with a mixer until creamy.
  4. Pour the mixture into the graham cracker crust and bake for 25 minutes. You can make mini cheesecakes with a cupcake pan and liners. Check oven after 20 minutes with the mini cheesecakes.
  5. Combine the topping ingredients and stir until smooth.
  6. Remove the cheesecake from the oven and let cool for 5 minutes (leave the oven on).
  7. Pour the topping on top of the cheesecake and smooth out with the back of a spoon.
  8. Drizzle the Passion Fruit Jam on top of the sour cream topping. Use a knife to create Napoleon design lines in the topping.
  9. Now shut off the oven and put the cheesecake back into the oven for 10 minutes to set the topping.
  10. Remove the cheesecake from the oven, cool and then refrigerate overnight before serving.
