Peppercorn Steak with Hawaiian Pepper Smoked Pineapple

Peppercorn Steak with Hawaiian Pepper Smoked Pineapple

INGREDIENTS:

  • 1 grass-feed Porterhouse steak (1 inch thick)
  • 1/2 tbsp. coarse sea salt
  • 1 tbsp. organic whole black peppercorns
  • 3 tbsp. Steve’s Akaka Falls Farm Passion Fruit Hawaiian Pepper Smoked Pineapple Jam

GARNISH:

  • Fresh organic basil

DIRECTIONS:

  1. Rinse the steak with cool water and pat dry with a paper towel.
  2. Place in a baking dish and slit 20 small slices through out the steak. Slip the whole black peppercorns into each slit of the steak.
  3. Sprinkle sea salt on both sides of the steak and spread a heaping tablespoon of jam on top of the steak.
  4. Place the oven rack as close to the top of the oven as possible. Leave room for the pan. Turn on the broiler in the oven and place the steak on the top shelf. Broil for 5 minutes on one side.
  5. Take the steak out of the oven and use tongs to flip over the steak. Now add another large heaping tablespoon of jam on the other side of the steak and spread it around with the back of the spoon. Place it back in the oven and broil for another 6 minutes.
  6. Remove from the oven and let it rest for 5 minutes.
  7. Thinly slice the steak and pile in the center of a dinner plate. Pour sauce from the steak pan on top of the steak slices and garnish with herbs.

Serve with sautéed vegetables or salad.
