Quick and Easy Passion Fruit Caesar Salad Dressing


6 anchovy fillets packed in oil
1 small garlic clove
8 tablespoons Steve’s Akaka Falls Passion Fruit Butter
1/2 teaspoon Dijon mustard
3 tablespoons finely grated parmesan
Freshly ground black pepper
Sea salt


This is my favorite go-to dressing. I use it for all kinds of salads, sandwiches, and even dipping sauces. This recipe doesn’t use raw eggs, because the eggs are already cooked in the passion fruit butter, so there is less drama for people who don’t use farm fresh eggs. Lemon butter makes an adequate substitute for Passion Fruit Butter if that is what you have in the house.



Add the garlic clove to a small food processor. Pulse a few times until chopped fine.

Add the anchovy fillets, Passion Fruit Butter, Dijon mustard, parmesan cheese, pepper, sea salt, and lemon essential oil. Pulse several times until the anchovies are well incorporated.

Serve immediately or refrigerate overnight for an even richer flavor.
