Smoked Salmon Salad with Blue Cheese and Passion Fruit Ginger Dressing

Smoked Salmon Salad with Blue Cheese and Passion Fruit Ginger Dressing

INGREDIENTS:

  • 5 oz. organic spring mix
  • 1 large organic tomato, sliced thin
  • 1/4 organic red onion, sliced thin
  • 2 organic beets, sliced
  • 4 oz. sliced smoked salmon
  • Steve’s Akaka Falls Farm Passion Fruit Ginger Jam
  • Verbena’s Super-Duper Blue Cheese Dressing (see my blog for recipe)

DIRECTIONS:

  1. Rinse the organic spring mix and dry in a salad spinner. Put the spring mix on the center of a large plate.
  2. Slice the tomatoes and red onion into thin slices. Add to the top of the spring mix.
  3. Slice the beets and place on top of the tomatoes and red onion.
  4. Pull the smoked salmon into thin strips and place on the top of the salad.
  5. Blend all the ingredients for the blue cheese dressing and drizzle on top of the salad (recipe on my blog).
  6. Stir up the passion fruit ginger jam and use a spoon to drizzle it on top of the blue cheese dressing. The amount of dressing is to taste, so use sparingly and then add more until you reach your desired amount.

Oh, so yum!
