Three Bean Salad with Spicy Tahitian Lime Ginger


2 cups fresh green beans
1 shallot – thinly sliced
14 oz. can of garbanzo beans
14 oz. can of organic dark red kidney beans
1 jar Steve’s Akaka Falls Spicy Tahitian Lime Ginger Jam
5 T. organic olive oil
1 tsp. sea salt


I make this at least a couple of times a month. I love serving it with a chunk of cheese, bread, and salad.

  1. Trim the ends of the green beans and cut them into 1-inch slices. Drop the green beans in salted boiling water and boil for 5 minutes. Remove the green beans from the salted boiling water with a slotted spoon (or strainer) and plunge them into a bowl of ice water. The ice water halts the cooking process and allows the beans to keep their bright green color and firm texture.
  2. Now mix the rest of the ingredients in a large bowl and add in the green beans at the end.
  3. Store in glass mason jars in the refrigerator overnight and serve with green salads and feta cheese (optional).
