Turkey Coconut Lime Ginger Salad

INGREDIENTS:

4 cups cooked turkey – diced large
4 celery stalks – chopped small
2 shallots – chopped fine
4 stalks chives – diced medium
1 bunch parsley – chopped fine
6 leaves sage – chopped medium
1/2 tsp. white pepper
2 tsp. sea salt
1/2 cup Akaka Falls Coconut Lime Butter
3 drops ginger essential oil
1/2 cup sliced almonds

DIRECTIONS:

This is a quick and easy recipe and one of my favorite ways to use leftover turkey after I have gotten tired of turkey, stuffing, and cranberry sandwiches.

Step 1- Dice large chunks of cooked leftover turkey and place them into a large mixing bowl. When using a mixing bowl, always use one that is twice as large as you think you will need. This makes everything so much easier, faster, and less messy.

Step 2- Add the chopped celery, shallots, chives, parsley, sage leaves, white pepper, and sea salt. Toss well with a big rubber spatula.

Step 3- Measure 1/2 cup of Steve’s Akaka Falls Coconut Lime Butter in a liquid measuring cup and add 3 drops of ginger essential oil. Mix together well.

Step 4- Fold the coconut lime butter and sliced almonds into the chopped turkey mixture.

Step 5- Serve as a sandwich, over a salad, or inside a tomato half.
