Yellow Lentils Soup with Passion Fruit Pineapple Preserves

Yellow lentils soup with Passion fruit pineapple preserves
1 carrot roughly chopped
1 potato roughly chopped
Small pinch of turmeric
1 onion roughly chopped
1/2 tbsp salt approx.
1 cup red split lentils
5 cups of cold water
2 tbsp Akaka Falls Farm Passion Fruit Pineapple Preserve
Boil the lentils in cold water until cooked on medium high heat
Chop the carrots, potato add them to the soup along with 2 tbsp of Akaka Falls Farm
Passion Fruit Pineapple Preserve.
Cook for approx. 15-20 min until the potato is totally cooked and blitz using a hand
blender.
Serve in a bowl with a squeeze of lemon and a drizzle of extra virgin olive oil.
